When i bought my youngster a couple of years ago, she was a bit of a kicker, to the point i couldn't even touch her babk legs.
We got a bean pole and attached a duster to the end and spent many hourse just running the stick up and down her legs, it took some time and she kicked out at it a lot to start with, however, when she kicked, we made sure the stick either stayed on her legs or went striaght back there to prove to her that her kicking wouldn't make us go away! The bean pole was great becuase if she'd given it a hefty kick, it would've shattered so wouldn't do any damage.
it did take us a lot of time but now i can do anything with her legs.
this would help with the picking out but the mounting does sound like a different issue, i would definitely get the horses back checked.
